Ingredients
4 quinces, peeled and diced
2 pears, peeled and diced
1 medium onion, peeled and diced
4g fennel seeds
10g mustard seeds
1 pinch saffron
7g ginger powder
320g white wine vinegar
150g sugar
Juice of 1 orange
2 ½ orange peel, grated finely
150g cooked whole chestnuts, chopped (available in most supermarkets)
Preparation
Step 1: Cook the Base
In a large saucepan, combine quinces, onion, fennel seeds, mustard seeds, saffron, ginger powder, white wine vinegar, sugar, orange juice, and orange peel.
Cook on low heat, stirring continuously, until the quinces begin to soften and the mixture thickens.
Step 2: Add the Pears
After 30 minutes, add the diced pears.
Continue to cook for another 15 minutes, stirring occasionally.
Step 3: Finish with Chestnuts
Stir in the chopped chestnuts, ensuring they are well combined.
Remove from heat and let the chutney cool.
Step 4: Store & Serve
Transfer the chutney into a sterilized Kilner jar.
Refrigerate until ready to serve.
