Ingredients
1 tbsp oil (extra virgin olive oil works great)
½ onion, peeled and chopped
2 cloves garlic, peeled and minced
2 ripe mangoes, peeled and diced

¼ tsp turmeric
¼ tsp smoked paprika
2 tbsp red wine vinegar
3 tbsp maple syrup
Preparation
Heat oil in a pan over medium heat. Add chopped onions and sauté for about 10 minutes, stirring occasionally until soft.
Stir in the garlic, mangoes, habanero, coriander, turmeric, smoked paprika, vinegar, and maple syrup. Let everything simmer on low heat for 5-7 minutes, allowing the flavors to meld.
Remove from heat and let cool slightly.
Using an immersion blender or a high-speed blender, blend until smooth (or leave it slightly chunky for texture).
