About the Recipe

Mandazi are a beloved Kenyan (and East African) snack — light, tender inside and crisp outside. They’re simple to make, comforting to eat, and pair beautifully with a warm cup of cinnamon milk for a cozy, nostalgic treat.

Ingredients

  • 2 cups Grove & Meadow's all-purpose diversity flour

  • 3 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp ground cardamom (optional, for spice)

  • ¼ tsp salt

  • 3 tbsp butter (softened)

  • ½ cup coconut milk (or regular milk)

  • Oil for deep frying

Preparation

  • In a bowl, mix flour, sugar, baking powder, cardamom, and salt.

  • Rub in the butter until the mixture is crumbly.

  • Add coconut milk gradually and knead into a soft dough.

  • Cover and let rest for 20 minutes.

  • Roll out the dough on a floured surface and cut into triangles or preferred shapes.

  • Heat oil in a pan and fry the pieces until golden brown on both sides.

  • Remove, drain on paper towels, and serve warm.
