Mandazi are a beloved Kenyan (and East African) snack — light, tender inside and crisp outside. They’re simple to make, comforting to eat, and pair beautifully with a warm cup of cinnamon milk for a cozy, nostalgic treat.

Ingredients
2 cups Grove & Meadow's all-purpose diversity flour
3 tbsp sugar
1 tsp baking powder
½ tsp ground cardamom (optional, for spice)
¼ tsp salt
3 tbsp butter (softened)
½ cup coconut milk (or regular milk)
Oil for deep frying
Preparation
In a bowl, mix flour, sugar, baking powder, cardamom, and salt.
Rub in the butter until the mixture is crumbly.
Add coconut milk gradually and knead into a soft dough.
Cover and let rest for 20 minutes.
Roll out the dough on a floured surface and cut into triangles or preferred shapes.
Heat oil in a pan and fry the pieces until golden brown on both sides.
Remove, drain on paper towels, and serve warm.
