This whipped feta dip is beloved for its creamy texture and bold flavor, made by blending feta with cream cheese, garlic, olive oil and bright notes of lemon. The original version suggests serving with bread, flatbreads, pita, or crackers. In this adaptation, charcoal sourdough crackers add a dark, earthy crunch and a striking visual contrast, elevating a familiar dip into a gourmet snack or appetizer.

Ingredients
400 g Danish-style feta (at room temperature)
125 g cream cheese (softened)
¼ teaspoon garlic (crushed)
1½ teaspoons lemon zest (optional)
3 tablespoons extra virgin olive oil
Dip Toppings
3 tablespoons honey
1 tablespoon extra virgin olive oil
2 tablespoons pistachios, roughly chopped
½ teaspoon parsley, finely minced
Pinch of chilli / red pepper flakes (optional)
A sprinkle of lemon zest (optional)
To Serve
Charcoal sourdough crackers (as many as needed)
Preparation
Blend the base dip
Place the feta, cream cheese, garlic and (if using) lemon zest into a food processor.
Blitz on high for about 10 seconds (or until fairly smooth), scraping down the sides as needed.
With the motor running, slowly drizzle in the olive oil through the feed chute, then blitz ~10 seconds more until the mixture is silky and cohesive.
Plate & swirl
Scrape the dip into a shallow bowl or plate and spread it so the thickness is around 1.5 cm (0.6″).
Use the back of a spoon to make gentle swirls or dents on the surface (these “pools” will catch honey and oil).
Add toppings
Drizzle honey and olive oil over the top.
Sprinkle the chopped pistachios, parsley, optional chilli flakes, and optional extra lemon zest.
Serve
Arrange the charcoal sourdough crackers around or beside the bowl so guests can dip or scoop.
Serve immediately for best texture and flavor.
